1 cup plain Greek yogurt
1 medium Cucumber, peeled, seeded, and diced
1 tablespoon salt
1 cup Sour Cream
1 Garlic Clove, minced
1 tablespoon lemon juice
1 tablespoon finely chopped dill
1/4 cup Extra Virgin Olive Oil
1/2 cup Good Sense® Cucumber Dill Gusto!™
Line a fine mesh strainer with two layers of cheese cloth and set over a medium size bowl. Place Greek yogurt in the cheese cloth, cover with plastic wrap and set in a refrigerator overnight.
In a small bowl combine cucumber and salt and let sit for at least one hour. Strain cucumber in a colander and lightly press with a paper towel to release as much liquid as possible. In a large bowl combine Greek yogurt, sour cream, garlic, lemon juice, and dill. Slowly whisk in olive oil until fully incorporated. Stir in strained cucumber and Cucumber Dill Gusto!™ and chill for at least 2 hours. Season with salt and pepper to taste and enjoy.
