Tropical Nut Muffin

3 cups(15oz.) All Purpose Flour
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
2 eggs
1 cup sugar
1/2 cup whole milk
3/4 cup coconut cream
1/4 cup butter, melted and cooled
3/4 cup dried banana
1/2 cup coconut + 1/4 cup for tops o muffins
3.5 oz. package Good Sense® Mango Honey Macadamia Delite™


Preheat oven to 375°F and line muffin tin with paper liners. In a medium size bowl sift together flour, baking powder, baking soda, and salt.

In a large bowl whisk together eggs, sugar, whole milk, coconut cream, and butter until thoroughly combined. Stir in flour mixture, banana, coconut, and Mango Honey Macadamia Delite™ until combined, do not over mix. Divide batter between muffin cups and top each muffin with one teaspoon of coconut, gently pressing into the batter. Bake muffins for 20-25 minutes until golden brown and a toothpick inserted into the center of the muffin comes out clean.
