3 cups(15oz.) All Purpose Flour
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup sugar
1/2 cup whole milk
3/4 cup coconut cream
1/4 cup butter, melted and cooled
3/4 cup dried banana
1/2 cup coconut + 1/4 cup for tops of muffins
1/2 Cup Good Sense® Tropical Sunshine Trail Mix (or to taste)
Preheat oven to 375°F and line muffin tin with paper liners. In a medium size bowl sift together flour, baking powder, baking soda, and salt.
In a large bowl whisk together eggs, sugar, whole milk, coconut cream, and butter until thoroughly combined. Stir in flour mixture, banana, coconut, and Tropical Sunshine Trail Mix until combined, do not over mix. Divide batter between muffin cups and top each muffin with one teaspoon of coconut, gently pressing into the batter. Bake muffins for 20-25 minutes until golden brown and a toothpick inserted into the center of the muffin comes out clean.
