8 tablespoons butter, melted and cooled
3/4 cup light brown sugar, packed
1/2 cup creamy peanut butter
1/2 teaspoon vanilla extract
1/2 cup all-purpose flour
1 1/2 cup quick cooking oats or old fashioned rolled oats
1/2 teaspoon baking soda
1/2 teaspoon salt
1 8oz package Cross 'N Country®
Preheat oven to 350° F and line cookie sheets with parchment paper. In a large bowl, cream together butter, peanut butter and brown sugar. Add egg and vanilla whisking until fully incorporated. Stir in flour, oats, baking soda, and salt. Then add the package of Cross 'N Country® Mix and stir until combined.
Divide and roll dough into balls, around 2 tablespoons in size. Place 8 dough balls on one of the parchment lined cookie sheets making sure there is enough space left between each ball. Lightly flatten each dough ball allowing the cookies to spread evenly. Bake trays one at a time for 12-14 minutes until lightly golden brown. Let cookies cool 5 minutes before moving them to a cooling rack.
