Couscous Salad with a Citrus Vinaigrette Dressing

1 cup water
1 cup couscous
1 10oz. can sliced black olives - drained (about ½ cup)
1/2 cup green onions - thinly sliced
1/2 cup fresh parsley - chopped
1/2 package Salad Pizazz!® Orange Cranberry Almondine™

1 tablespoon frozen orange juice concentrate
1 tablespoon seasoned rice vinegar
1 tablespoon honey
1 tablespoon lemon juice
1/2 cup extra virgin olive oil
1/2 teaspoon salt
1/4 teaspoon pepper


For Salad: Bring 1 cup water to boil in large saucepan.  Add couscous and cover, remove from heat and let stand 5 minutes.  Fluff with fork.  Transfer to large bowl to cool.  Whisk together orange juice concentrate, vinegar, honey, lemon juice, salt and pepper.  Add oil in slowly and whisk until incorporated.  Mix all remaining salad ingredients, including Salad Pizazz!® Orange Cranberry Almondine™, into cooled couscous.  Pour dressing over salad and toss.
